The food served at Du Côté des Olivades is the image of the house, simple, light and refined. Feminine as well: it bears the stamp of chef Nancy Bourguignon, whose core is to value the essential, the product. Through subtle arrangements, accurate and precise preparation, she highlights their flavours. Her creations are invariably sprinkled with two ingredients that are her signature: passion and simplicity.

This autodidact ended up in charge almost by accident: replacing the chef at short notice due to a day's absence, she immediately seduced her guests with her personal and sincere interpretation of local gastronomy. Encouraged by her makeshift customers, she persevered and refined her technique with a chef from one of the larger houses. 

Quality food made with local and seasonal produce

Back behind her stove, she deliberately opts for a smaller menu to put the spotlight on seasonal products, gleaned from the markets, picked in full ripeness and flavour. Her rigour is expressed both in the precision of the execution and the attention she pays to selecting the artisans she works with: olive oil from the Vallée des Baux and in part from the trees on the estate, la fleur de sel de Camargue, meat from Alpilles, and for the fish, the majority come form the cold waters of the North Sea and share their origins with the chef, and the vegetables are grown under the Provence sun.

The result is an "authentic cuisine", mixing tradition and freshness, brought to the dining table through the attentive service of Vanessa Bourguignon and her sommelier trained at the oenology school in Avignon. They like to allow enthusiasts to discover nuggets from little-known producers and future winners but do not hesitate to bring out bottles from their cellars from more prestigious domains. And as generosity and sharing animate Du Côté des Olivades, curious gourmets can sit behind the scenes, closer to the excitement: a table for guests is actually placed inside the kitchen.
